On the fourth day of Quincemas Quince House makes for you, Christmas granola, with cranberries and pecan nuts!

Mixed Spice, Cranberry and Orange Granola

200g desiccated or flaked coconut

150g porridge oats

100g sunflower seeds

100g pumpkin seeds

100g pecan nuts

50g flax seed

50g dried cranberries

1 orange

2tsp mixed spice

1tsp cinnamon

5tbsp coconut oil, melted

2tbsp maple syrup

Pre-heat the oven to 180C/gas mark 4.

Roughly chop together the nuts and seeds. Place on a baking tray with the coconut, oats, cinnamon, mixed spice, flax seed and cranberries. Finely grate over the rind of the orange. Pour over the coconut oil and maple syrup and then mix well.

Place in the oven for 30 - 40 minutes but take out and stir every 5 minutes. It should be nicely toasted.

Store in an airtight container.
