Tasty fruit bread

450ml warm water

2tbsp golden syrup

2 x 7g sachets instant yeast

300g strong wholemeal flour

150g strong white flour

1tsp mixed spice

1tsp ground cinnamon

90g chopped dates

90g chopped figs

80g raisins

40g pumpkin seeds

1tsp sea salt

Makes 2 loaves

  • Put the water, golden syrup and yeast in a jug and pour over the 180ml warm water. Stir well until the yeast is encorporated.

  • Place the flours, spices, fruit, pumpkin seeds and salt in a large bowl. Make a well in the centre and pour in the yeast mixture. Mix well and the spoon into 2 greased 1 litre loaf tins. Cover the tins with oiled cling film and leave to rise until the dough reaches the top of the tins.

  • Pre-heat the oven to 200C/gas mark 6. Place the loaves in the oven and bake for 30 minutes. If the loaves get too brown, cover with foil. Remove from the oven and leave to cool for 10 minutes before turning out of the tins. Serve sliced with butter.
